Those are the questions we kept hearing from home cooks across Chennai, and they are the reason Saaram exists. People wondered why a spice mix could smell different from one batch to the next, and why it was so hard to find the flavour a properly made masala is supposed to have.
What we found when we went looking was worse than expected. Spices many of us trust every day can carry pesticide residue over the safety limit, dye used to make tired turmeric look fresh, and cheap filler added to protect someone else's margin. We have seen "premium" chilli powder cut with brick dust. Cumin dyed to look richer than it is. Packets labelled "pure" that smelled of nothing, because the oils had evaporated out of months-old stock, or because the spice had already been through an extraction factory once and was sold on anyway. That had to stop.
Every Saaram blend comes out of countless kitchen tests and one belief that has not moved since day one: every home cook deserves spices that are pure, potent and safe. No artificial colour, no filler, and no shortcut, in batches small enough that we can stand behind every jar.
